Menu & Courses
The broth, which is the cornerstone of our cuisine, is made using generous amounts of carefully selected kombu and dried fish flakes, resulting in an elegant flavor that brings out the natural taste of the ingredients.
Each seasonal ingredient is carefully prepared using techniques best suited to bringing out its natural qualities, while honoring the traditions of Kyoto cuisine. Rather than relying on elaborate presentation, we place the utmost importance on bringing out the natural flavors of each ingredient.
